A miso soup a day keeps the colds and fly away

Start with 3 cups of water and a piece of kombu (about the size of your thumb) or another soup base (mushrooms or bonita flakes). Let the soup base and daikon slices steep for a few minutes in boiling water, If you are using bonita flakes or kombu, you'll want to remove them before adding daikon radish slices. Reduce the heat down to a simmer. Add green onions, and tofu cubes (optional), or if you have some wakame flakes on hand, sprinkle a few onto the soup. Wakame will expand a lot and add a salty flavor, a tiny bit does the job. Add the miso last as you don't want to boil it. Break down a couple of heaping tablespoons of miso in a separate container, using 1/4 cup of water. Once it's blended into the water, pour into soup and let that heat up. The miso is a powerful superfood, the soup itself, being a hot stock will help break down mucus, but the real helpful ingredient here is the daikon. It's a mucus buster, parasite cleanser, digestive aid and all root vegetables have the power to bring you down to earth, calming you and helping you pay attention to the moment at hand. I can see you enjoying your soup now. A cup of miso soup a day, does keep the doctor away!
